Each mash temperature step is reached by pulling out a portion of mash, boiling it, and returning it to the rest of the mash. The ultimate Czech brewing tradition, twelve hours of hardcore technical and physical brewing goes into each batch and most brewers consider it too challenging to ever attempt. Czech malt, Sladek and Saaz hops, naturally carbonated and lagered in horizontal tanks.
